Noma: My Perfect Storm - The Film - Australian Release 11 February 2016

Noma, My Perfect Storm is documentary feature film taking a creative journey into the mind of René Redzepi the founder of Noma Restaurant.

With automatic access to genius, René Redzepi plays with wilderness and interprets a forgotten edible world into a language we all understand.

A modern ugly duckling, bullied by his peers, Redzepi found his home in the no man’s land and transformed into swan.

How did he manage to revolutionise the entire world of gastronomy, inventing the alphabet and vocabulary that would infuse newfound pedigree to Nordic cuisine and establish a new edible world while radically changing the image of the modern chef? His story has the feel of a classic fairy tale: the ugly duckling transformed into a majestic swan, who now reigns over the realm of modern gourmet cuisine. But beneath the polished surface, cracks appear in the form of old wounds. 2013 stands as the worst year in René Redzepi’s career.

We follow him as he fights his way back to the top, reinventing NOMA and reclaiming the title of best restaurant in the world in 2014 for the fourth time.

The film will release in selected cinemas nationally on 11th February, 2016.

Umbrella Entertainment is pleased to announce the Australian premiere of NOMA: MY PERFECT STORM at The Ritz Cinema, Randwick on Monday 8th February, featuring an exclusive Q&A session with NOMA’s legendary head chef René Redzepi in conversation with Good Food’s Jill Dupleix.

Penang, Malaysia: This is the best place for food in Southeast Asia

Catherine Marshall writes ... All it takes is one mouthful of Baba-Nyonya and Penang's history comes to life. At a table inside a colonial-era building in the heart of George Town's UNESCO World Heritage Site, I dip my spoon into a bowl of Assam hae, stir-fried prawns in tamarind sauce. It's a simple dish – prawns, tamarind paste, sugar and salt – but it tells a long and complicated story.

The Assam hae contains within its sour-sweet flavours and chili-infused heat centuries of migration and assimilation and mixed marriages. It fuses the cuisines of the merchants who migrated to the Straits of Malacca – mostly Chinese and Indian – with those of the Malay women they married. Known as Peranakans (which, translated, means 'locally born'), this distinct cultural group developed its own homogenous cuisine called Baba-Nyonya – Baba for the foreign husbands, Nyonya for their Malay wives.

Rootstock Sydney sustainable food and wine festival Saturday, 28 November 2015- Sunday, 29 November 2015

Rootstock Sydney is a unique, collaborative not-for-profit sustainable food and wine festival. It is a place where winemakers, grape growers, chefs, sommeliers, writers, artists, thinkers (and most importantly drinkers!) can all come together to share with one another.

Started by Giorgio De Maria, Mike Bennie, James Hird, Linda Wiss and Matt Young in 2013, this year will see the third incarnation of the Rootstock Sydney festival. We will continue to push a sustainable agenda and to celebrate the people behind the produce. We are also very excited to be presenting many new additions (but not SO2!) to the festival program this year.

As Rootstock Sydney continues to push boundaries and open sustainable doorways, the generous support of producers, chefs, sommeliers, volunteers and media outlets amongst others is paramount to the event's success. We sincerely thank you all for all your help and support, as without you there would be no Rootstock Sydney.

Carriageworks (Sydney) is the largest and most significant contemporary multi-arts centre of its kind in Australia. Carriageworks engages artists and audiences with contemporary ideas and issues.

Carriageworks is proud to be hosting Rootstock Sydney for its second year.
